Watercress Scramble with Scott’s Crispy Onions
Scott’s Smokey Bacon Crispy Onions (take as big a handful as you wish, why not)
4 large eggs
4 tbsp milk
pinch of salt and black pepper
good knob of butter, plus extra for spreading
Handful of watercress, roughly chopped
2 small soda farls, split in half
In a small bowl beat together the eggs, milk and some seasoning.
Heat Scott’s Crispy Onions according to the packet instructions (30 secs microwave/ 2 mins hot oven). Melt the butter in a small-to-medium-sized frying pan (preferably non-stick) While the butter is melting, toast the soda farls on both sides.
Pour the eggs into the pan and stir slowly using a wooden spoon, bringing all the mixture from the edges of the pan. When the eggs are almost scrambled, add the watercress.
Pile the scramble on top of the buttered farls. Most importantly finish your creation spectacularly with a load of Scott’s Crispy Onions. Serve with some oven-roasted baby vine tomatoes.
